Mint Apple Jelly

7 × 250 ml (8 oz) jars

Equipment

  • Double boiler or heatproof bowl over saucepan

  • Water bath canner

  • Food processer or Blender

  • Food mill or jelly strainer

  • Large spoon or ladle

  • Canning funnel

  • Jar lifter

  • Lid lifter

  • Half-pint canning jars with lids and rings

  • Fine sieve or cheesecloth

  • Dishwasher or boiling water for jar sterilization

Ingredients

  • Apple juice (clear, canned or bottled)

    • 950 ml / 1 quart

  • Powdered fruit pectin

    • 1 package (approx. 50 g / 1¾ oz)

  • Granulated sugar

    • 1.1 kg / 5½ cups

  • Peppermint extract

    • 2.5 ml / ½ teaspoon

  • Green food coloring (optional)

    • ~5 drops

Preparation


  1. Combine juice and pectin


    In a large saucepan, combine apple juice, pectin, and food coloring (if using).

  2. Bring to boil


    Bring to a full boil over high heat, stirring constantly.

  3. Add sugar


    Add sugar all at once. Stir until dissolved.

  4. Boil


    Boil hard for 2 minutes, stirring constantly.

  5. Add mint flavor


    Remove from heat. Stir in peppermint extract.

  6. Skim and fill


    Skim foam if necessary.


    Pour into hot jars, leaving 3 mm / ⅛ inch headspace.

  7. Seal and process


    Process in a boiling water bath for 5 minutes.

Cool and check seals

A bright, translucent jelly with fresh mint flavor. Classic with lamb, toast, or afternoon tea.
